How To Make No Bake Skellington Cheesecakes
Prepare your muffin pan by lining with cupcake liners for easy removal. Set aside.
Begin by crushing the graham crackers. You can use a food processor or a ziploc bag with a rolling pin. Transfer the crushed graham cracker crumbs to a medium sized bowl and combine with the melted butter and black food coloring. Stir until it looks like wet sand.

Pour a heaping tablespoon of graham crackers into the cupcake liners and press into the bottom. Set aside.

In the bowl of a stand mixer, combine the softened cream cheese and sugar. Cream until smooth. Scrape the sides and mix again.
Add in the vanilla and heavy whipping cream. Whip on medium for one minute. Scrape the sides and mix again for another 30 seconds.
Pour the cheesecake mixture into the prepared pans just until the top of the liner. Place in the fridge and allow to set for approximately 2-4 hours.

Once chilled, finish with the face decoration.
To melt the chocolate, combine the chocolate and heavy cream (if using – makes the chocolate softer and not set “hard” again). Heat in a microwave safe dish for 30 seconds. Stir well. Heat for an additional 15 seconds at a time and stir well between each interval until smooth. Transfer the chocolate to a piping bag (no tip needed), or small ziploc bag.
Cut a small hole in the tip of the piping bag when ready to decorate. Decorate the many faces of Jack Skellington!
