Ingredients:

  • 12 tablespoons unsalted butter, softened (divided into ½ cup and ¼ cup)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 cups flour
  • ½ cup cocoa powder
  • Pink, yellow, and blue food coloring
  • ½ cup semi-sweet or dark chocolate chips (for melting)

Directions:

  1. Preheat your oven to 350 degrees. Line a couple of baking sheets with parchment paper and set them aside.
  2. In the bowl of a stand mixer, combine the softened ½ cup of butter and sugar. Cream them together until the mixture becomes light in color and fluffy.
  3. Add in the egg and vanilla, mixing well to combine.
  4. Replace the whisk attachment with the paddle attachment on the mixer. Gradually add the flour and mix until the dough is cohesive and pulls away from the sides of the bowl.

Divide the dough in half. Place one half back in the mixer’s bowl and add the cocoa powder and the remaining ¼ cup of softened butter. Mix with the paddle attachment until the dough is smooth. Set it aside.

Take the remaining cookie dough and divide it into three equal sections. Add a few drops of each food coloring (pink, yellow, and blue) to each section. Gently knead the dough to distribute the colors, creating a stained glass effect. Don’t overmix; the colors should remain streaked.

Roll each ball of colored dough into logs. Arrange them side by side and press them together to form a single log, reshaping if needed. Shape the chocolate dough into a log and press it together with the colored log. Try to make both sides equal in size.

Using a sharp knife, slice off about ¼-inch thick rounds from the cookie dough log. Reshape them into more circular shapes if necessary and place them on the prepared baking sheet. Leave some space between each cookie, but they won’t spread much.

Bake in the preheated oven for no more than 12 minutes. Avoid overbaking to keep the cookies moist. They’re done when the edges are set, and the edges and bottom have a slight hint of brown. Allow them to cool completely.

After the cookies have cooled, melt the chocolate chips in a microwave-safe bowl. Heat for 30 seconds, stir, then heat for another 30 seconds and stir again. Transfer the melted chocolate to a piping bag.

Cut a small hole in the end of the piping bag. Pipe a large circle around the edge of each cookie. Then, divide the cookie in half and pipe a line of chocolate between the chocolate side and the colored side. Continue by piping two more lines equally spaced to create six pie slices. Finish by piping rounded pieces to connect each line in the form of a spider web.

Allow the chocolate to cool and set.

Notes

We used dark cocoa powder for these cookies – regular would also work, they just would just be a lighter brown.  You could also find black cocoa online and use that as well if you’d like it to be darker.
