Ingredients: For the cookie base:

  • 1 cup unsalted butter, softened
  • ¾ cup sugar
  • ⅔ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ¼ cups flour
  • ⅔ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Slime Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2-3 tablespoons milk (if needed)
  • Neon green food coloring
  • Sprinkles to garnish

Directions:

  1. Preheat the oven to 350 degrees. Place parchment paper on a couple of cookie sheet pans or spray them with non-stick spray. Set them aside.
  2. In the bowl of a stand mixer, combine the softened butter and sugars. Cream until smooth.
  3. Add in the eggs, vanilla, baking soda, and salt. Combine well, scraping down the sides and mixing again.
  4. Combine the flour and cocoa powder and mix well. The mixture will be thick.

Scoop out enough dough (about the size of a golf ball) and flatten slightly into a disc. Place on the prepared cookie sheets, leaving space between the cookies for spreading during baking. Top each cookie with about a teaspoon’s worth of sprinkles.

Bake in the preheated oven for 10-12 minutes or until the edges are set.

While the cookies are baking, make the buttercream frosting. In the bowl of a stand mixer, combine the softened butter, salt, vanilla, and about half of the powdered sugar. Cream until smooth.

Add in the remaining powdered sugar and about 1 tablespoon’s worth of milk. While it mixes, if you need to add more milk to thin it, only add 1 tablespoon at a time until thoroughly mixed. Add in the neon green food coloring and whip on high speed for about a minute. Scrape the sides and mix again.

Transfer about a cup’s worth at a time to a microwave-safe dish and heat for about 30 seconds, or until the frosting melts slightly. Stir.

Fill the syringe with the melted frosting.

Once the cookies are removed from the oven, immediately inject the melted buttercream into the center of the cookie while it’s still hot and pliable. If you wait too long, the cookie will harden, preventing the frosting from filling the center. The frosting should ooze out of the cracks and overflow from the cookie.

Refill the syringe when needed and fill all the cookies. Follow up with a few more sprinkles if desired.

Allow the cookies to cool for the frosting to set back up. Enjoy!

    Notes

    We used homemade buttercream for the “slime” filling – you could also used pre-made, storebought frosting and it would work as well.
    You will need a syringe to insert the slime frosting into the cookie. You can pick them up at grocery stores or online. You could also use a piping bag or ziploc to just pour some slime on top of the cookie if you don’t want to inject it inside the cookie. Do not bake the cookie with the slime frosting already inserted – it will make a big mess!
